If you make the Pumpkin Chocolate Chip Loaf, you will likely have some leftover pumpkin. I found this recipe in Ladies Home Journal and decided that I would give it a try. (I have previously had pumpkin milkshakes from McDonalds and I like them pretty good. Homemade milkshakes have got to be better though!)
3 scoops vanilla ice cream
1-2 T. canned pumpkin
1/4 t. cinnamon
1/4 cup milk
Combine all ingredients in a blender and blend until smooth. Sprinkle the top with more cinnamon to serve.
The recipe claims to serve two, but the glass you see in the picture is a short glass and it includes all the milkshake made from this recipe. It does not serve two unless you are drinking from shot glasses! 🙂 Next time I might double or triple the recipe! It was tasty though!
